Iceland travel destinations and it Golden Circle highlights this geological magnum opus of our Mother Earth. This geothermal epicenter is where the Eurasian and North American plates meet. As an Acupuncturist-at-Sea, I visit many incredible destinations. Iceland’s “Golden Circle” is one I visited in the summer of 2017. Its name is only a modern, tourism term, not based on history. This route takes a 190-mile loop in southern Iceland. Starting in Recjevik, it loops into the southern uplands and back. This article outlines 3 highlights: Pingvellir National Park, Haukadalur Geothermal Field and Gulfoss or “Golden Falls.”

First, we leave Reykjavik with crystal, clear skies and temperatures that reach almost 70 degrees F, considered a heat wave in Iceland. Our first stop was Pingvellir National Park, a UNESCO World Heritage Site. Here, the national parliament of Iceland established in 930 A.D. with sessions held there until 1798. It served as a good assembly sit, because of the cliffs forming an amphitheater. However, few ruins still exist as a vestige to this heritage.

    Icelandic Thunder Bread – A Delicious, Sweet Rye Bread Geothermally Cooked

    This Icelandic Thunder Bread Recipe honors a unique tradition, from this part of the world.  When I toured Iceland, I experienced this delicious bread for the first time.  Elated by my taste buds, it lingered in the back of my mind for years.  Then, during the pause of 2020, I researched and finally made some for me and my family.  So, read on to learn about the recipe to enjoy this scrumptious sweet, rye bread.

    Iceland’s Thunder Bread Recipe Tradition

    This sweet, dark rye bread (rugbraud) is called “thunder bread” or “pot bread.”  Uniquely, it’s leavened with baking powder (not yeast), and is slightly sweetened by brown sugar and molasses.   Most importantly, though it’s geothermally cooked underground near hot springs in Iceland.  The steaming is essential.

    The name, “Thunder Bread,” is humorously named from the after affects of the high fiber content.  Also, it’s named after Thor, “The God of Thunder.”  And no worries, if you don’t have a hotspring in your back yard.  Read on to learn universal tips for improvising this recipe no matter where you are. 

    Icelandic Thunder Bread Recipe
    Geothermally Cooked in the Ground

    Traditionally, the bread is slow cooked underground for 12 hours.  However, I substituted this technique by simmering in a slow cooker or crock pot for 4 hours.  Once again, the steaming is important.  I used 2 medium ceramic bowls.  Also, ramekins can be used.  Tenting with aluminum foil over the bowls steams the bread perfectly. 

    Ingredients – Iceland’s Thunder Bread Recipe

    • 2 ½ cups rye flour
    • 1 ½ cups all-purpose flour
    • ½ teaspoon salt
    • ½ cup packed brown sugar
    • 2 cups hot water
    • 1 tablespoon molasses
    • 1 cup milk (scalded and slightly cooled)

    Steps

    1.  Whisk together the dry ingredients: rye flour, all-purpose flour, backing powder and salt in a large bowl.
    2.  Mix in brown sugar
    3.  Stir molasses in scaled milk until dissolved
    4. Slowly stir mild into the dry ingredients
    5. Knead the dough until it is shiny and flour is soaked in.  Divide into 2 parts.
    6. Butter sides of 2 ceramic bowls or ramekins ( each holding approx. 1 ½ cups batter)
    7. Tent the molds with aluminum foil, leaving about and inch for the bread to rise. Secure the edges of the foil around the rims with rubber bands.
    8. Pour enough hot water into the hot cooker to cover bottom half of bowls.
    9. Put on the lid and turn slow cooker to high for 4 hours. (Make sure the water doesn’t evaporate below recommended level)

    Finally, Best Served Hot!

    I love plain and simple fresh butter only on this hot bread to bring out the flavor.  But many enjoy pickled herring, pates or cheese.  Whatever your palate desires, that is your choice. Bon appétit!

If ever there was a time to reconnect with America If ever there was a time to reconnect with American Democracy, it is NOW! Boston is the perfect place known as the "Cradle of Liberty," with many firsts for the USA.

I decided to unplug from the current political reality and celebrate the U.S. historical roots on Independence Day 2025! I visited many historic sites on Boston's Freedom Trail, listened to 2 readings of the Declaration of Independence, interacted with people in colonial costumes and parades. 

It was a bittersweet day with many tears and the realization that I have taken democracy for granted. However, I will never let that happen again! I feel more patriotic than ever to make sure the blood, sweat and tears over the last 249 years were not in vain.

The city Gouda lies in the province of South Holland in the Netherlands. It’s named after the Gouwe River that it surrounds. The city became known for the Gouda cheese traded in its market square. Furthermore, Gouda is famous for stroopwafels, grachten or canals, smoking pipes and its 15th century city hall. Originally, it was a marshland in the 13th century. Later, a canal was built and its estuary became a harbor.

On the Vracar plateau, the Church of Saint Sava is On the Vracar plateau, the Church of Saint Sava is the largest Orthodox church in the Balkans and second largest in the world. Saint Sava is the founder of the Serbian Orthodox church. The church’s construction lasted from 1935 to 1989. It became delayed by WW II and the Yugoslavian communism, that didn’t allow for building churches. 

Shaped like a Greek Cross, the facade consists of white marble and granite in a Neo-Byzantine style. Its dome is one of the largest in the world. The mosaics are spectacular, with the central mosaic in the dome depicting the Ascension of Jesus.

Just 15 minutes from Mostar is the Blagaj Dervish Just 15 minutes from Mostar is the Blagaj Dervish Monastery. It sits at the source of the Buna River which flows out of a cave beneath a canyon wall. The beautiful tekke (lodge) displays Ottoman Sufi architecture from the 15th century. 

The white building reflects on the turquoise river. Inside you’ll find a small mosque, guest rooms and mausoleums. Dervishes of the Sufi orders stayed here for spiritual retreats over the centuries. Today, it is open for tourist of all faiths to learn about this sacred site and the Sufi tradition. 

We explored the riverside and view of Blagaj from across the river. Also, with our shoes off, we enjoyed an indoor tour of the monastery.
